I've chosen simple meals that either don't need prep or are already in the freezer. Since we'll be eating early and I'm still trying to get some gym time in this will be one of those weeks when my husband and kids will need to do most of the cooking.
Here's our menu this week.
- Baked Chicken, salad, mashed potatoes, corn, bread, desert
- Lasagna, salad, glazed carrots, garlic bread
- Meatloaf, strawberry salad, applesauce, rice pilaf
- White chicken chili, homemade bread (OK - homemade from the store!)
- Fend for yourself
- Take out
- Dinner out
I don't really have a recipe for the baked chicken. Typically I'll salt & pepper the chicken, sometimes I'll throw some garlic or rosemary on top. That is one of the easiest meals for me and/or the rest of the family to make. The lasagna & meatloaf are from the freezer. This is the first time we've had a freezer and I really need to empty it out. I may have went a little overboard filling it up :)
