Last week I didn't even bother to menu plan. I knew the week was going to be so crazy, plus Mike was on second shift so family dinners would be hit or miss. I usually keep a few things lying around to throw on the table so that was my plan for last week!
This week I'm looking forward to a relatively quiet week where we can actually have some sense of normalcy. With the weather starting to get nice we're teetering on the edge of putting away our winter menu but we still have a couple of winter items this week. My husband is a little sad because he LOVES spaghetti but the kids are doing the happy dance!
Here's what I'm planning for the week.
Brats, potato salad, tomato salad, grilled asparagus
Spaghetti and meatballs, garlic bread, strawberry salad, corn
Chicken and stuffing casserole, dinner rolls, glazed carrots, salad
Hamburgers, tomato salad, homemade applesauce, corn, salad
Dinner out with friends
Leftovers
Fend for yourself
As I was rooting around our chest freezer I noticed that I still have a lot of stuff left over from last year. I have quite a few tomatoes, zucchini and pumpkin that I need to use up. This morning I made some zucchini bread to take to my mother in law's house. I'll have to try my hand at some pumpkin chocolate chip muffins later this week.
